Homemade quiche from leftovers

Who doesn’t love warm quiche straight from the oven with a fresh salad. The recipe below can be adapted depending what what you have in the fridge and what needs eating up!

Ingredients:

  • Pre-made shortcrust pastry
  • 3 large eggs
  • 250ml milk
  • Lots of cheese (the more the better)
  • Whatever you have in the fridge that you need to use up!

How do to it…….

Making the base

First you need to butter the tin.  I’d love to say it’s a great way for the kids to get involved in cooking but they tend to lick the grease off their fingers then get bored and go and watch TV.  Inevitably the next step is to bath the kids and clean the sofa.

Once you’ve dealt with the chaos of the kids, line your quiche tin with the pre-made pastry.  Make sure there’s no cracks or holes.  You’ll need to trim the top of the tin so it looks neat and tidy in case you have the time and the inclination to put it on Instagram.

If the tin has holes in the bottom, then apparently the air will circulate so there’s no need to pre-bake.  If it doesn’t, bob it in the oven on 190 for 15 mins, make sure you cover it with greaseproof paper and add uncooked rice to weigh it down.

Making the mixture:

In all honesty, I used the leftover meat, veg and cheese in the fridge and the ham from the Sunday roast.  I googled lots of recipes and wanted to try them all, so in the end, everything ended up going in.

To prepare the mixture you just need to be a bit sensible.  Fry anything that you’d normally fry.  For me that was onions, mushrooms, peppers, chorizo and courgettes.  Steam anything you’d normally steam.  For me that was asparagus and spinach.  For anything already cooked, like the ham from my Sunday roast, just chop it.

Once it’s all cooked and chopped, chuck it in a large bowl and add any seasoning you fancy.  I just added pepper and chives (again the chives were at the bottom of the veg box and needed eating).

Generally at this point it’s a good idea to check on the kids and make sure they’re watching something appropriate on You Tube.  Mine seem to like watching videos of other kids opening kinder eggs.  Kids of today are weird! Maybe pour wine at this point.

Whisk three eggs (free range obvs) and 250ml of milk together and pour into the mixture.

Add as much cheese as you think your cholesterol level can cope with.  Personally I added feta, ricotta, red Leicester and mature cheddar.  Possibly a little excessive but at this point I felt like I was doing a good job of ‘eating up’ in advance of my big shop later this week. 

Stir everything together and pour into the case.  Stick in the oven at 190 degrees.

Baking time depends on whether the base is pre-baked but lets face it, we all know what a good quiche looks like so you can probably guess when it’s done.  Allow anytime between 35mins to one hour.

While it’s cooking, you could check on the kids or scroll through facebook, it’s all good!

Best to eat straight out the oven while it’s warm, although it does need ten minutes to rest.  We had ours with a lovely fresh tomato and beetroot salad.  Our kids watched other kids play with toys on You Tube while we ate.

Honestly, it was an almost perfect date night for lockdown!
